mixed greens summer salad // recipe
we bbq a lot in the summer, and i am always looking for new ways to prepare veggies and interesting but simple salads. so with a little inspiration from a packaged kale salad i've been purchasing week after week, i thought i would try out an at home version with an equally as simple dressing.
i love that you can buy the ingredients in bulk, chop at the beginning of the week, and add in different dressings and toppings depending on the meal. chop and mix equal amounts of kale, cabbage, brussel sprouts and broccoli.
olive oil + lemon based dressings are my fave (not to mention take almost zero effort), but to spice this one up for dinner or entertaining, add in some garlic. you'll need about 2 tbsp. lemon juice, 1 tbsp. olive oil, 2 minced garlic cloves, salt and pepper.
top with your favorite dried fruit and nuts.
my friends have gotten used to the store bought salad that inspired this one, which i'll admit, i won't stop buying when in need of a quick side. but i can't wait to try this one out on them and see the difference! what is your favorite summer salad recipe?
