beet chip appetizer // recipes

eating vegetable chips makes me feel slightly less guilty about… eating chips. ryan and i occasionally grab a bag and finish it about 3 minutes later. so i wanted to give them a try myself but turn them into a fun appetizer we could serve next time we had friends over. i added my favorite ingredient, truffle oil! here is what i came up with.

you can really top with anything you'd like, but we used beets, parmesan, sprouts, truffle oil and truffle salt.

slice the beets SUPER thin. like paper thin. i cut mine around 1/8" and it took a while to get them crispy so i'll definitely go much thinner next time. spread a layer of olive oil, put them on a cookie sheet and bake at 400 for about 10 minutes on each side, or until crispy.

while they're baking. chop up the parm, or your cheese of choice.

once your chips are baked and cooled, spread some truffle oil on the top and finally top with the parm, sprouts and a sprinkle of truffle salt.

the beets packed a ton of flavor that went well with the truffle oil and parmesan. i think next time we'll mix it up with different veggies and cheeses! have you guys ever made veggie chips? what combo would you try?
