Crostinis + Cocktails || An Easy Summer Girls’ Night
I’d be lying if I didn’t tell you part of shooting and creating the kind of content that we do is that we always seem to have girls’ nights, afternoons, weekends. We kind of get to do it without having to invite anyone else. It’s one of the perks of the job. I want to share with you the easiest, quickest, yummiest menu we’ve done that you can try for your next girls night. When it comes to food, if you ever invite more than a couple people it’s nice to give people choices, especially for those who have food allergies/preferences. For instance, I always try and have something vegetarian since people seem to be eating less and less meat. The easiest thing to do is ask the people you’re inviting if there are any ingredients they can’t eat. Don’t want to reach out to all of your guests? Assume that there are preferences and try to accommodate that in as many ways as possible.
For the purpose of this post, I’m sharing Crostinis three ways. Crostinis are the perfect small bite that can accompany almost any beverage, and I’ve never met a person who doesn’t love a crostini.
The ingredients below are listed in levels of taste, so if you love more lemon, add more zest! That’s what makes these recipes so good. No measuring, no timers, just layering the ingredients according to taste.
The crostini
Ingredients
Lemon, Ricotta, Basil + Honey
extra virgin olive oil
ricotta
lemon zest
basil
pink peppercorns, crushed
sea salt flakes
honey
Pear, Walnut, Goat Cheese

Directions for all 3 crostinis
preheat a char-grill pan or bbq over high heat
brush each side of bread with olive oil
cook for 1-2 minutes each side
top each piece of bread with the list of ingredients (in the order that they are listed)
Sticking with the easiest, quickest, yummiest theme, for the cocktail we used one type of alcohol but added different flavors and garnishes to make each one different. We started with a basic sparkling wine; go with Prosecco if you like it a bit sweeter and proper champagne if you like your bubbles more dry.
The cocktail
Ingredients
add 1 tsp of whichever syrup used
1/2 of egg white
1-2 oz of prosecco or champagne
a couple ice cubes
floral garnish (lavender or thyme sprigs, jasmine bloom)
Directions
add all ingredients to a cocktail shaker
shake, shake, shake
pour into your glass (remove ice cubes)
add 4-6 oz of prosecco or champagne
top it off with floral garnish
