a morning celebration dessert.
one of my favorite parts of birthdays (mine or family) is the morning. i love making a special breakfast, opening presents, and maybe even popping a bottle of champs if time and work schedules allow;)
with all of the pretty "naked" cakes floating around on pinterest, it inspired me to do something similar with pancakes (don't ask me how random inspiration like this comes to me.. it just does and i'm ok with it.) anyways, i thought it would be perfect for a breakfast in bed celebration. it's like a cake for your morning... an acceptable cake for your morning.

basically it is just a giant stack of yummy pancakes with all of the normal toppings made into the "frosting". to make the frosting, i mixed 1 tbsp. butter (melted) with 1/4 cup of powdered sugar. blend with a fork until you have crumbles like the image above. then add 1 tbsp. of maple syrup and stir into a frosting-like consistency.
spread on the tops of 5 mini pancakes and stack. this will make enough for about 2 stacks.. plenty for one person. it's sugar and butter people. careful with this stuff.
serve on a fancy little tray for the perfect morning celebration!
