Hi everyone! I'm Gillian from Coastal Bride, a Charleston, South Carolina based wedding blog. I am so excited to share with you today this end of summer cocktail recipe adapted from the Minimalist Baker. Even though lazy beach days and salty summer afternoons are fading you can still celebrate the last warm nights of the season. nothing says refreshing like a cool gin + tonic and this lightened up recipe with a hint of coconut water is just the ticket! I used fresh local ingredients for this cocktail including Charleston made coconut water and Jack Rudy tonic. After a few sips of this naturally sweetened drink I promise your summer blues will simply melt away!

The recipe for this cocktail couldn't be simpler! Simple add ice to a glass, pour gin over ice, top with tonic, coconut water and fresh lime juice. Add mint and a lime wedge for garnish and voila, summer in a glass!

2 oz. gin

2 oz. tonic water

2 oz. coconut water

juice of 1/2 or whole lime
