Stop Waiting for a Special Occasion and Host That Brunch This Spring
I am the QUEEN of waiting. Waiting for Friday, or the weekend, or the special occasion, or the perfect weather… for literally everything. And I’ve started to realize that all this waiting means I am missing out on having special moments ALL of the time instead.
A shift I’d really like to make in my life and in my business (and hopefully help you all do the same if you’re anything like me) is making things happen more often, less perfect, and in general, infusing the everyday with more joy and beauty. I mean, think about it. Wouldn’t you rather have little pockets of things that excite you every day instead of a special Saturday every once in a while? I know I would.
Let’s start with a spring brunch. (btw the weather totally sucked this day and i was missing ingredients for my tart and i didn’t get all the flowers i wanted but it didn’t matter!).
• Recreate the look with these pieces •
This started out as an idea for something I wanted to do with my husband on the weekend. Schedules an activities we committed to ended up conflicting and so I was left with an idea, and a bunch of ingredients, but no reason to set up the mini brunch for two.
And when I told a friend, she said, “I’m coming over and we’re making this happen”. So on a random Thursday we hung out in the backyard, pulled some decor from the cabinets, made some delicious tarts, and had a nice morning/afternoon… with no special occasion! It was perfect.
So grab a friend, or your partner, or your dog, or give yourself the morning off and do it just for you!
Tart Recipe (makes 4)
Ingredients:
• pastry dough
• 3 eggs
• 3 pcs chicken sausage
• 1/2 cup mushrooms
• 2 tbsp feta
• 2 sprigs of thyme, chopped
• 1 tbsp chives, chopped
• salt, pepper, and garlic to taste
For the topper:
• micro greens
• lemon
• olive oil
• edible flowers
How to make it:
1. Sauté your mushrooms in a bit of olive oil
2. Cook sausage and chop (I purchased mine pre cooked)
3. Press dough into tart pans (x4)
4. Top dough with veg, sausage and feta
5. Whisk eggs with spices and herbs, then pour over the top of the filling
6. Bake at 350 for 20(ish) minutes!
Mix your greens with olive oil and lemon, top each tart with the mixture and a few edible flowers
